Make a quick, flavorful chicken bowl featuring a sticky, sweet, and spicy glaze made with honey and sriracha.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/4 cup honey
  • 3 tablespoons sriracha sauce
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/2 cup water or chicken broth
  • 2 teaspoons cornstarch
  • 4 cups cooked rice (white or brown) for serving
  • 2 cups steamed broccoli florets
  • 1 cup shredded carrots
  • Green onions, sliced, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Prepare the sauce base: In a small bowl, whisk together the honey, sriracha, soy sauce, rice vinegar, ginger, and garlic. Set aside.
  2. Make the slurry: In a separate small bowl, whisk the cornstarch with the water or broth until smooth. Set aside.
  3. Cook the chicken: Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 6 to 8 minutes.
  4. Add the sauce: Pour the honey sriracha mixture over the cooked chicken. Bring the sauce to a simmer.
  5. Thicken the sauce: Pour the cornstarch slurry into the simmering sauce while stirring constantly. Cook for 1 to 2 minutes until the sauce thickens and coats the chicken well.
  6. Assemble the bowls: Divide the cooked rice among four bowls. Top the rice with the sauced chicken, steamed broccoli, and shredded carrots.
  7. Garnish the bowls with sliced green onions and sesame seeds before serving immediately.

Notes

  • For meal prep, store the cooked chicken and sauce separately from the rice and vegetables to prevent sogginess. Reheat components together just before eating.
  • Adjust the sriracha amount to control the heat level for your preference.
  • Use chicken thighs for a richer flavor and moister texture.
