Make this sweet and spicy chicken dinner in one skillet for quick preparation and minimal cleanup.

Ingredients

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 cup honey
  • 1/4 cup Sriracha sauce
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Optional: 1 red bell pepper, sliced
  • Optional: Green onions, chopped for garnish

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In a small bowl, whisk together the honey, Sriracha, soy sauce, minced garlic, and grated ginger.
  4. If using bell pepper, add it to the skillet and cook for 3 minutes until slightly tender.
  5. Return the cooked chicken to the skillet.
  6. In a separate small bowl, whisk the cornstarch and cold water until smooth to create a slurry.
  7. Pour the honey Sriracha mixture over the chicken in the skillet. Bring the sauce to a simmer.
  8. Stir in the cornstarch slurry. Cook, stirring constantly, until the sauce thickens enough to coat the chicken, about 1-2 minutes.
  9. Remove from heat. Garnish with chopped green onions before serving.

Notes

  • For a thicker sauce, increase the cornstarch to 1.5 tablespoons.
  • You can substitute chicken thighs for breasts if you prefer.
  • Serve this dish over rice or with steamed broccoli.
