4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/2 cup crumbled feta cheese
1/4 cup hot honey (adjust to your spice preference)
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
Pat the chicken breasts dry with paper towels. This helps them brown better.
In a small bowl, mix the salt, pepper, garlic powder, and paprika. Rub this seasoning mix evenly over both sides of the chicken breasts.
Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3 minutes per side until golden brown.
Transfer the skillet to the preheated oven. Bake for 10 minutes.
Remove the skillet from the oven. Sprinkle the crumbled feta cheese evenly over the chicken breasts.
In a small bowl, whisk together the hot honey and lemon juice. Drizzle this mixture over the feta and chicken.
Return the skillet to the oven and bake for another 5 to 8 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the feta is soft and slightly melted.
Remove from the oven, let rest for 5 minutes, and garnish with fresh parsley before serving.
Notes
For extra crispy skin, you can broil the chicken for the last 1-2 minutes, watching closely to prevent burning the honey glaze.
If you do not have an oven-safe skillet, transfer the seared chicken to a standard baking dish before adding the feta and honey.
Serve this chicken over rice or with roasted asparagus for a complete meal.
