1/4 cup water
1/4 cup packed brown sugar
1/2 teaspoon vanilla extract
1/2 cup strongly brewed coffee or 2 shots espresso, cooled
1 cup oat milk (full fat recommended)

Instructions
Make the syrup: Combine water and brown sugar in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Do not boil. Remove from heat and stir in the vanilla extract. Let the syrup cool completely.
Prepare the coffee: Brew your coffee or pull your espresso shots. Allow the coffee to cool to room temperature or chill it quickly.
Assemble the drink: Fill a tall glass with ice cubes.
Pour the cooled brown sugar syrup over the ice.
Pour the cooled coffee or espresso over the syrup layer.
Slowly top the drink with the oat milk.
Serve immediately without stirring for the layered effect, or stir before drinking.
Notes
For the strongest coffee flavor, use espresso. If using brewed coffee, make it very strong, like a cold brew concentrate or a double-strength pour-over.
If you do not have oat milk, whole dairy milk or soy milk work as substitutes, but the texture will change.
To speed up cooling the syrup, place the saucepan in an ice bath after removing it from the heat.
