A recipe for making a refreshing iced lavender latte at home, including instructions for a simple homemade lavender syrup.

  • 1 cup water
  • 1 cup granulated sugar
  • 2 tablespoons dried culinary lavender buds
  • 1/2 cup strong brewed coffee or espresso (chilled)
  • 1 cup milk (dairy or non-dairy)
  • Ice cubes
  • Optional: 1/2 teaspoon vanilla extract

Instructions

  1. Make the syrup: Combine water, sugar, and dried lavender buds in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Do not boil.
  2. Remove the saucepan from the heat. Let the lavender steep in the syrup for 30 minutes.
  3. Strain the syrup through a fine-mesh sieve into a clean jar, discarding the lavender buds. Let the syrup cool completely. This makes about 1 1/4 cups of syrup.
  4. To assemble the latte: Fill a tall glass with ice cubes.
  5. Add 2 to 3 tablespoons of the cooled lavender syrup to the glass, adjusting to your taste preference.
  6. Pour in the chilled coffee or espresso.
  7. Top with 1 cup of your chosen milk. Add vanilla extract now if using.
  8. Stir well before drinking.

Notes

  • For a less floral taste, steep the lavender for only 15 minutes, or use 1 tablespoon of buds instead of 2.
  • Use cold brew concentrate for a smoother coffee base in this iced drink.
  • If you prefer a Lavender Vanilla Latte, add 1/2 teaspoon of vanilla extract to the syrup while it is steeping.
  • Store leftover lavender syrup in the refrigerator for up to two weeks.
