Instant Pot Beef and Broccoli

Make tender beef and crisp broccoli quickly using your Instant Pot for a savory, takeout-style dinner.

Ingredients

  • 1.5 lb flank steak or sirloin, thinly sliced against the grain
  • 1 tablespoon olive oil
  • 1 cup beef broth
  • 1/2 cup soy sauce (low sodium preferred)
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground white pepper
  • 1 large head of broccoli, cut into florets (about 4 cups)
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water

Instructions

  1. Slice the beef thinly against the grain. Pat the slices dry with paper towels.
  2. Set the Instant Pot to the Sauté function. Add olive oil. When hot, sear the beef in batches until lightly browned on the edges. Do not overcrowd the pot. Remove the beef and set aside.
  3. Pour the beef broth into the pot and scrape up any browned bits from the bottom. This prevents a burn notice.
  4. Add the soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and white pepper to the pot. Stir well.
  5. Return the seared beef to the pot. Do not stir after adding the beef.
  6. Secure the lid and set the vent to Sealing. Select Manual/Pressure Cook (High Pressure) for 3 minutes.
  7. When the cooking cycle finishes, allow a Natural Pressure Release (NPR) for 5 minutes, then carefully perform a Quick Release (QR) for any remaining pressure.
  8. Remove the lid. Remove the beef from the pot using a slotted spoon and set aside.
  9. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  10. Set the Instant Pot back to the Sauté function (Low). When the liquid simmers, slowly whisk in the cornstarch slurry. Stir constantly until the sauce thickens to your desired consistency, about 1-2 minutes.
  11. Add the broccoli florets to the simmering sauce. Cook for 2 to 3 minutes until the broccoli is bright green and tender-crisp.
  12. Return the beef to the pot. Stir gently to coat the beef and broccoli in the sauce. Serve immediately over rice if desired.

Notes

  • For the best texture, slice the beef while it is slightly frozen; this makes thin slicing easier.
  • Do not overcook the broccoli. Adding it at the very end ensures it stays crisp.
  • If you prefer a spicier sauce, add 1/2 teaspoon of red pepper flakes with the other sauce ingredients.
