Instant Pot Creamy Lasagna Soup

Make a hearty, comforting lasagna soup quickly using your Instant Pot. This one-pot recipe captures classic lasagna flavors with a creamy finish.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (24 ounce) jar marinara sauce
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 8 ounces lasagna noodles, broken into 1-inch pieces
  • 1/2 cup heavy cream
  • 1/2 cup water
  • 1 cup frozen spinach
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste

Instructions

  1. Set the Instant Pot to Sauté mode. Add olive oil. When hot, add ground meat and cook until browned. Drain excess fat.
  2. Add onion and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in marinara sauce, beef broth, diced tomatoes, oregano, basil, and red pepper flakes. Stir well to combine, scraping up any browned bits from the bottom of the pot.
  4. Add the broken lasagna noodles. Do not stir after adding noodles.
  5. Secure the lid and set the vent to Sealing. Cook on Manual/Pressure Cook High for 4 minutes.
  6. When the cooking time is complete, perform a Quick Release of the pressure.
  7. Stir in heavy cream, water, spinach, and Parmesan cheese. Let the soup sit for 5 minutes to allow the spinach to wilt and the soup to thicken slightly.
  8. Taste and adjust seasoning with salt and pepper. Serve hot with extra Parmesan cheese.

Notes

  • If you prefer a less creamy soup, reduce the heavy cream to 1/4 cup.
  • You can substitute ground turkey or Italian sausage for the ground beef.
  • For easier cleanup, place a trivet in the bottom of the pot before adding ingredients if you want to avoid direct contact with the bottom during the initial sauté step.
