This hearty, cheesy ground beef bake captures classic cowboy comfort food flavors. It layers seasoned beef, creamy sauce, vegetables, and is topped with a simple biscuit crust for a satisfying family dinner.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (10.5 ounce) can cream of chicken soup
  • 1/2 cup milk
  • 1 (10 ounce) can Ro*Tel diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese, divided
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup Bisquick baking mix
  • 1/3 cup milk (for topping)
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. In a large bowl, combine the cooked beef and onion mixture with the cream of mushroom soup, cream of chicken soup, 1/2 cup milk, Ro*Tel, frozen mixed vegetables, and 1/2 cup of the shredded cheddar cheese. Mix everything well.
  4. Spread this beef mixture evenly into the prepared baking dish.
  5. In a separate small bowl, prepare the biscuit topping by mixing the Bisquick baking mix with the 1/3 cup milk until just combined. Do not overmix.
  6. Drop spoonfuls of the biscuit batter over the top of the beef mixture, spacing them out evenly.
  7. Brush the tops of the biscuit dough lightly with the melted butter.
  8. Bake for 25 minutes.
  9. Remove the casserole from the oven and sprinkle the remaining 1/2 cup of shredded cheddar cheese over the biscuits and exposed filling.
  10. Return to the oven and bake for another 5 to 10 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.
  11. Let the casserole rest for 5 minutes before you cut and serve this easy casserole dinner.

Notes

  • For an extra layer of flavor, add 1/2 teaspoon of chili powder when seasoning the beef mixture.
  • If you prefer a different topping, you can substitute the biscuit mix with a can of refrigerated flaky biscuits, cut into pieces and placed on top.
  • This hearty beef casserole freezes well before baking. Cover tightly and freeze for up to three months. Thaw overnight in the refrigerator before baking.
