1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
4 tablespoons unsalted butter
1 cup heavy cream
1/2 cup grated Parmesan cheese, plus extra for topping
2 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Pinch of nutmeg
3 medium zucchini, spiralized into noodles (zoodles)
Instructions
Season the chicken pieces lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Pour in the heavy cream. Bring the cream to a gentle simmer, stirring occasionally. Let it simmer for 2 to 3 minutes until it thickens slightly.
Reduce the heat to low. Gradually stir in the grated Parmesan cheese until the sauce is smooth and fully incorporated. Stir in the salt, pepper, and nutmeg. Taste the sauce and adjust seasoning if needed.
Add the cooked chicken back into the sauce. Stir to coat.
If using zucchini noodles, add them to the skillet during the last minute of cooking, tossing gently to coat them in the sauce and warm them through. Do not overcook the zoodles, or they will become watery.
Serve immediately, topping with extra grated Parmesan cheese.
Notes
For a thicker sauce, simmer the heavy cream slightly longer before adding the cheese, or add 1 teaspoon of xanthan gum mixed with 1 tablespoon of cold water while stirring vigorously.
If you prefer a different low-carb noodle, use shirataki noodles (rinsed well) or fettuccine made from almond flour or egg.
You can substitute half the heavy cream with cream cheese for an even richer texture.
