Make a light, airy, and zesty lemon cheesecake mousse that fits a ketogenic diet. This no-bake dessert is quick to prepare and sugar-free.

  • 8 oz cream cheese, softened
  • 1/2 cup granulated keto-friendly sweetener
  • 1/4 cup heavy whipping cream, cold
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large bowl, beat the softened cream cheese and keto sweetener together until smooth and creamy.
  2. Add the lemon juice, lemon zest, vanilla extract, and salt to the cream cheese mixture. Mix until just combined.
  3. In a separate, chilled bowl, whip the cold heavy whipping cream until stiff peaks form.
  4. Gently fold the whipped cream into the lemon-cream cheese mixture in two additions until no streaks remain. Do not overmix.
  5. Spoon the mousse into individual serving dishes or small glasses.
  6. Chill in the refrigerator for at least 2 hours before serving to allow it to set properly.

Notes

  • For a firmer mousse, you can add 1/4 teaspoon of xanthan gum when mixing the cream cheese, but this is optional.
  • Use a high-quality powdered keto sweetener for the smoothest texture, as granulated sweeteners can sometimes leave a slight graininess.
