8 oz linguine or spaghetti
1 lb raw shrimp, peeled and deveined
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup fresh lemon juice
1 teaspoon lemon zest
1/4 cup reserved pasta water
1/4 cup fresh parsley, chopped
Salt and black pepper to taste
Instructions
Cook the pasta according to package directions. Before draining, reserve about 1/2 cup of the starchy cooking water. Drain the pasta and set aside.
Season the shrimp lightly with salt and pepper.
Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium heat.
Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
Add the remaining 2 tablespoons of butter and the minced garlic to the same skillet. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
Pour in the lemon juice and lemon zest. Stir well.
Add 1/4 cup of the reserved pasta water to the skillet and bring to a light simmer, scraping up any browned bits from the bottom.
Return the cooked shrimp and the drained pasta to the skillet. Toss everything together to coat the pasta evenly with the sauce. Add more pasta water if the sauce seems too dry.
Stir in the chopped fresh parsley. Taste and adjust seasoning with salt and pepper as needed.
Serve immediately.
Notes
For a richer sauce, you can substitute heavy cream for half of the reserved pasta water.
Use fresh lemon juice for the best flavor.
If you like heat, add a pinch of red pepper flakes with the garlic.
