  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  2. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat until the butter melts.
  3. Add the minced garlic and red pepper flakes (if using) to the skillet. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Add the seasoned shrimp to the skillet in a single layer. Cook for 1 to 2 minutes per side until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
  5. Reduce the heat to low. Add the remaining 2 tablespoons of butter, lemon juice, and lemon zest to the skillet. Toss the shrimp to coat them in the sauce.
  6. Cook for 30 seconds more until the butter sauce thickens slightly.
  7. Remove the skillet from the heat. Stir in the fresh parsley. Taste and add more salt or pepper if needed.
  8. Serve immediately over pasta, rice, or with crusty bread for dipping.

Notes

  • To prevent shrimp from becoming tough, cook them only until they curl into a C shape. If they curl into an O shape, they are likely overcooked.
  • For a richer sauce, use only butter instead of combining it with olive oil, but watch the heat closely to prevent burning.
  • This dish pairs well with angel hair pasta or served alongside roasted asparagus.
