Cook tender chicken breasts or thighs in a single skillet with a bright, savory lemon garlic butter sauce. This recipe is fast and simple for any weeknight.

  • 4 boneless, skinless chicken breasts or thighs (about 1.5 lbs)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken pieces on both sides with salt, pepper, and paprika.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Place the chicken in the hot skillet and cook for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F or 74°C). Remove the chicken from the skillet and set aside on a plate.
  4. Reduce the heat to medium. Add the butter to the same skillet. Let it melt.
  5. Add the minced garlic to the melted butter and cook for about 30 seconds until fragrant. Do not let the garlic burn.
  6. Pour in the chicken broth and lemon juice. Bring the liquid to a simmer, scraping up any browned bits from the bottom of the pan. Let the sauce reduce slightly for 2 minutes.
  7. Return the cooked chicken to the skillet. Spoon the sauce over the chicken pieces.
  8. Sprinkle with fresh parsley before serving immediately.

Notes

  • If using chicken thighs, the cooking time may be slightly longer.
  • For a richer sauce, add 1 tablespoon of heavy cream with the broth.
  • You can use dried herbs if fresh parsley is not available, using 1 teaspoon dried parsley instead.
