Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups diced cooked potatoes
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • Salt and black pepper to taste
  • Optional toppings: cooked bacon bits, chopped chives, extra shredded cheese, sour cream

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Stir in milk and cheddar cheese. Cook, stirring, until cheese is melted and soup is heated through. Do not boil.
  5. Remove from heat and stir in sour cream. Season with salt and pepper.
  6. Ladle into bowls and add your favorite loaded baked potato toppings.

Notes

  • For a thicker soup, you can mash some of the cooked potatoes against the side of the pot before adding the milk.
  • Feel free to adjust the amount of cheese and sour cream to your preference.
  • This soup is best served immediately, but leftovers can be stored in the refrigerator for up to 3 days. Reheat gently on the stovetop.
