Whip up a batch of these loaded sheet pan nachos for your next gathering. They are easy to make and perfect for sharing with friends and family.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 (15 ounce) can refried beans
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (4 ounce) can chopped green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped red onion
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: sour cream, salsa, guacamole, jalapeños

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread a layer of tortilla chips evenly over a large baking sheet.
  3. In a skillet, brown the ground beef. Drain off any excess grease.
  4. Stir in the taco seasoning and refried beans. Cook for 2-3 minutes, until heated through.
  5. Spread the meat and bean mixture evenly over the tortilla chips.
  6. Scatter the rinsed black beans, diced tomatoes and green chilies, and chopped green chilies over the meat mixture.
  7. Sprinkle the shredded cheddar and Monterey Jack cheeses over the top.
  8. Add the chopped red onion and sliced black olives.
  9. Bake for 10-12 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh cilantro and any other desired toppings before serving.

Notes

  • For crispier nachos, you can toast the tortilla chips for a few minutes before adding the toppings.
  • Feel free to customize your nachos with your favorite toppings.
  • These are best served immediately after baking.
