- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper (any color)
- 1/2 cup chopped zucchini
- 1/4 cup corn kernels (fresh or frozen)
- 1/4 teaspoon chili powder
- 1/4 teaspoon cumin
- Salt and pepper to taste
- 4 large flour tortillas
- 1.5 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- Optional toppings: salsa, sour cream, guacamole
- Heat olive oil in a skillet over medium heat.
- Add chopped onion and bell pepper, and cook until softened, about 5 minutes.
- Stir in zucchini and corn. Cook for another 5-7 minutes, until vegetables are tender.
- Season with chili powder, cumin, salt, and pepper. Remove from heat.
- Wipe the skillet clean or use a new one.
- Place one tortilla in the skillet. Sprinkle half of the cheese over one half of the tortilla.
- Spoon half of the vegetable mixture over the cheese.
- Fold the other half of the tortilla over the filling.
- Cook for 2-3 minutes per side, until golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve with your favorite toppings.
Notes
- Feel free to add other vegetables like mushrooms, spinach, or jalapeños.
- For extra protein, add cooked black beans or shredded chicken to the filling.
