12 large eggs
1/2 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 pound breakfast sausage or chorizo
1 cup chopped onion
1 cup chopped bell pepper
1 cup shredded cheese
12 whole wheat tortillas
Optional: salsa, sour cream, avocado for serving
Instructions
Whisk eggs, milk, salt, and pepper in a bowl.
Heat olive oil in a large skillet over medium heat.
Add sausage and cook until browned. Drain excess grease.
Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
Pour egg mixture into the skillet with the sausage and vegetables.
Cook, stirring occasionally, until eggs are set.
Stir in shredded cheese until melted.
Spoon the egg mixture evenly onto the center of each tortilla.
Fold in the sides of the tortillas and then roll them up tightly to create burritos.
Wrap each burrito individually in plastic wrap, then in aluminum foil.
Freeze for up to 3 months.
To reheat, remove foil and plastic wrap, then microwave for 1-2 minutes or bake at 350°F (175°C) for 15-20 minutes until heated through.
Notes
For a vegetarian option, substitute the sausage with black beans or crumbled tofu.
Customize your burritos with your favorite vegetables like mushrooms or spinach.
Add a dash of hot sauce to the egg mixture for a little kick.
Ensure burritos are completely cooled before wrapping and freezing to prevent condensation.
