Make this fresh, simple salad featuring crisp cucumber and ripe tomatoes tossed in a bright lemon and oregano vinaigrette. It is a quick, no-cook side dish.

  • 2 large cucumbers, diced
  • 3 large ripe tomatoes, roughly chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vegetables: Dice the cucumbers and roughly chop the tomatoes. Thinly slice the red onion. Place all prepared vegetables in a large bowl.
  2. Make the vinaigrette: In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper until combined.
  3. Combine: Pour the vinaigrette over the vegetables. Gently toss everything together until the vegetables are lightly coated.
  4. Add cheese and herbs: If using, gently fold in the crumbled feta cheese and chopped fresh parsley.
  5. Serve: You can serve the salad immediately or let it marinate in the refrigerator for 15 minutes to allow the flavors to blend.

  • For a crunchier texture, peel the cucumbers before dicing.
  • If you prefer a milder onion flavor, soak the sliced red onion in cold water for 10 minutes, then drain before adding to the salad.
