1 cup graham cracker crumbs
2 tablespoons melted butter
8 ounces cream cheese, softened
1/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
2 cups diced apples
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon lemon juice
Instructions
Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a small bowl, combine graham cracker crumbs and melted butter. Press about 1 tablespoon of the mixture into the bottom of each cupcake liner to form the crust.
In a medium bowl, beat together the softened cream cheese and granulated sugar until smooth.
Beat in the egg and vanilla extract until just combined.
Spoon the cream cheese mixture evenly over the graham cracker crusts in the muffin tin.
In a separate bowl, toss the diced apples with brown sugar, cinnamon, nutmeg, and lemon juice.
Spoon the spiced apple mixture over the cream cheese filling in each muffin cup.
Bake for 20-25 minutes, or until the cheesecakes are set and the apples are tender.
Let the mini cheesecakes cool in the muffin tin for about 10 minutes before transferring them to a wire rack to cool completely.
Chill the cheesecakes in the refrigerator for at least 2 hours before serving.
