Easy Mini Pecan Pies in a Muffin Tin

Make individual, bite-sized pecan pies using a standard muffin tin. This recipe features a rich, gooey filling and a simple, buttery crust, perfect for holiday dessert platters.

  • 1 package (14.1 ounces) refrigerated pie crusts
  • 1 cup light corn syrup
  • 1/2 cup packed light brown sugar
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup pecan halves, plus extra for topping

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin.
  2. Unroll the pie crusts. Use a 3.5-inch round cookie cutter or glass rim to cut out 12 circles from the dough.
  3. Gently press each dough circle into the bottom and up the sides of the prepared muffin cups.
  4. In a medium bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, vanilla extract, and salt until well combined.
  5. Stir in the 1 cup of pecan halves into the filling mixture.
  6. Spoon the filling evenly into the 12 pie crust shells, filling each about three-quarters full.
  7. Place 3 to 4 pecan halves on top of the filling in each mini pie for decoration.
  8. Bake for 20 to 25 minutes, or until the crust edges are golden brown and the filling is mostly set but still slightly jiggly in the center.
  9. Let the mini pies cool completely in the muffin tin on a wire rack before attempting to remove them. This helps the filling set properly.
  10. Carefully remove the cooled mini pies from the tin before serving.

Notes

  • You can prepare the filling mixture up to one day ahead and store it covered in the refrigerator.
  • For a flakier crust, chill the cut dough circles for 15 minutes before pressing them into the muffin tin.
  • If you do not have corn syrup, you can substitute with maple syrup, but the texture of the filling will change slightly.
