Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, pour the boiling water over the wheat bran. Let it sit for 5 minutes to soften.
  3. Add the buttermilk, honey, oil, egg, and vanilla extract to the bran mixture. Stir everything together until combined. This is your wet mixture.
  4. In a separate large bowl, whisk together the whole wheat flour, baking soda, and salt. This is your dry mixture.
  5. Pour the wet mixture into the dry mixture. Stir gently until just combined. Do not overmix; a few lumps are fine.
  6. If using raisins, fold them in now.
  7. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  8. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
