Make these hearty, moist Morning Glory Muffins packed with carrots, apples, nuts, and warm spices. This recipe is easy to follow and perfect for make-ahead breakfasts.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots (about 3 medium carrots)
  • 1 cup chopped apple (peeled or unpeeled)
  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup raisins

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix.
  5. Fold in the grated carrots, chopped apple, coconut, nuts, and raisins until evenly distributed throughout the batter.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  7. Bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra moisture, you can substitute half the vegetable oil with unsweetened applesauce.
  • These muffins freeze well. Wrap cooled muffins individually in plastic wrap and place them in a freezer-safe bag for up to 3 months.
  • If you prefer a sweeter topping, mix 1/4 cup powdered sugar with 1 teaspoon milk and drizzle over cooled muffins.
