Make rich, satisfying chocolate peanut butter oat bars without turning on your oven. These simple bars require only five main ingredients and set quickly in the refrigerator.

  • 1 cup rolled oats
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, combine the rolled oats, peanut butter, powdered sugar, and melted butter. Mix until everything is thoroughly combined and the mixture holds together when pressed.
  3. Press the oat mixture evenly into the bottom of the prepared pan. Use the bottom of a glass or measuring cup to pack it down firmly.
  4. Place the chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each interval, until the chocolate is smooth and fully melted.
  5. Pour the melted chocolate over the oat base. Spread the chocolate evenly across the top layer.
  6. Refrigerate the bars for at least 2 hours, or until the chocolate topping is firm.
  7. Use the parchment paper overhang to lift the bars from the pan. Cut into 16 squares before serving.

Notes

  • For firmer bars, you can freeze them for 30 minutes before cutting.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • If you prefer a thinner chocolate layer, reduce the chocolate chips to 3/4 cup.
