4 bone-in or boneless pork chops (about 1 inch thick)
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried Italian seasoning
4 cloves garlic, minced
1 cup chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
1 tablespoon butter
Instructions
Season the pork chops on both sides with salt, pepper, and Italian seasoning.
Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 3 to 4 minutes per side until golden brown. Remove the chops from the skillet and set them aside on a plate.
Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let the broth simmer and reduce slightly for 2 minutes.
Stir in the heavy cream and bring the mixture to a gentle simmer.
Whisk in the grated Parmesan cheese until the sauce is smooth and thickened slightly.
Return the pork chops to the skillet. Spoon some sauce over the top of each chop. Cover the skillet and let the pork chops simmer gently for 5 to 8 minutes, or until cooked through (internal temperature reaches 145°F).
Stir the fresh spinach into the sauce until it wilts, about 1 minute. Add the butter and swirl until melted into the sauce.
Serve the pork chops immediately, spooning the creamy garlic sauce and spinach over them.
Notes
If your pork chops are very thin, reduce the simmering time in step 6 to prevent overcooking.
You can substitute half-and-half for heavy cream, but the sauce will be thinner.
For extra flavor, add 1/4 teaspoon of red pepper flakes with the garlic.
