Cook tender beef, crisp broccoli, and savory ramen noodles all in one pot for a fast weeknight dinner with minimal cleanup.

  • 1 pound flank steak, thinly sliced against the grain
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 small head of broccoli, cut into florets
  • 4 cups beef broth
  • 2 packages instant ramen noodles (discard seasoning packets)
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)

Instructions

  1. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  2. Add the sliced beef and cook until browned, about 3 to 4 minutes. Remove the beef from the pot and set it aside.
  3. Add the minced garlic and grated ginger to the pot. Cook for 30 seconds until fragrant.
  4. Pour in the beef broth, soy sauce, and brown sugar. Bring the mixture to a boil.
  5. Add the broccoli florets to the boiling broth. Cook for 3 minutes until slightly tender.
  6. Add the ramen noodles to the pot. Cook according to package directions, usually 2 to 3 minutes, stirring occasionally.
  7. Return the cooked beef to the pot. Stir in the sesame oil.
  8. Pour the cornstarch slurry into the pot and stir constantly until the sauce thickens slightly, about 1 minute.
  9. Serve immediately from the pot.

Notes

  • Thinly slicing the steak makes it cook quickly and stay tender.
  • You can substitute chicken or vegetable broth if needed.
  • For extra flavor, add a dash of sriracha or red pepper flakes with the sauce ingredients.
