One-Pot Chicken and Rice (Arroz con Pollo)

A simple and comforting one-pot chicken and rice dish, perfect for a weeknight meal. This Arroz con Pollo brings warmth and flavor to your table.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides. Remove chicken from the pot and set aside.
  3. Add onion to the pot and cook until softened, about 5 minutes.
  4. Add garlic, cumin, oregano, turmeric, paprika, salt, and pepper. Cook for 1 minute more until fragrant.
  5. Stir in the uncooked rice, coating it with the spices and onions.
  6. Return the chicken to the pot.
  7. Pour in the chicken broth. Bring to a boil.
  8. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  9. Stir in the frozen peas during the last 5 minutes of cooking.
  10. Garnish with fresh cilantro, if desired.

Notes

  • For a deeper flavor, you can brown the chicken in batches.
  • Adjust the spices to your preference.
  • Ensure the lid is tightly sealed to allow the rice to steam properly.
