Make this flavorful and spicy Cajun sausage pasta entirely in one pot for fast cooking and easy cleanup.

  • 1 pound smoked sausage or andouille, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning (or more to taste)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 12 ounces dry pasta (penne or rotini work well)
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Place the sliced sausage in a large pot or Dutch oven over medium-high heat. Cook until browned, about 5 minutes. Remove the sausage with a slotted spoon and set aside, leaving any rendered fat in the pot.
  2. Add the olive oil to the pot if needed. Add the chopped onion and bell pepper. Cook until softened, about 5 minutes.
  3. Stir in the minced garlic, Cajun seasoning, smoked paprika, and cayenne pepper. Cook for 1 minute until fragrant.
  4. Add the dry pasta and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally to prevent sticking, until the pasta is nearly tender.
  5. Stir in the heavy cream and the cooked sausage. Continue to simmer uncovered for 2-3 minutes until the sauce thickens slightly.
  6. Remove the pot from the heat. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  7. Taste the pasta and add salt and pepper if necessary. Serve immediately.

Notes

  • If you do not have pre-made Cajun seasoning, mix 1 teaspoon paprika, 1/2 teaspoon dried oregano, 1/2 teaspoon dried thyme, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/4 teaspoon cayenne pepper.
  • Use low-sodium broth to control the final salt level, as sausage and cheese add sodium.
  • If the sauce seems too thick after adding the cream, add a splash more broth or milk until you reach your desired consistency.
