1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cloves garlic, minced
1 cup chicken broth
8 ounces uncooked penne pasta
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, drained and chopped
2 cups fresh spinach
Instructions
Heat olive oil in a large pot or Dutch oven over medium-high heat.
Add chicken pieces, Italian seasoning, salt, and pepper. Cook until browned on all sides.
Add minced garlic to the pot and cook for 1 minute until fragrant.
Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pot.
Stir in the uncooked penne pasta. Cover and cook according to pasta package directions, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
Reduce heat to low. Stir in heavy cream, Parmesan cheese, and sun-dried tomatoes.
Add spinach and stir until wilted.
Serve immediately.
Notes
For an extra kick, add a pinch of red pepper flakes with the garlic.
If you don’t have sun-dried tomatoes, roasted red peppers work well too.
Feel free to add other vegetables like mushrooms or bell peppers.
