  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 24 egg roll wrappers
  • 1 large egg, beaten (for sealing)
  • Vegetable oil, for frying (or cooking spray for air fryer)
  • For Dipping Sauce: 1/2 cup powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the peach filling: In a small saucepan, combine the chopped peaches, granulated sugar, cornstarch, cinnamon, and nutmeg. Cook over medium heat, stirring constantly, until the mixture thickens, about 5 to 7 minutes. Remove from heat and stir in the vanilla extract. Let the filling cool completely.
  2. Assemble the egg rolls: Lay an egg roll wrapper on a clean surface with a corner pointing toward you. Place about 2 tablespoons of the cooled peach filling near the bottom corner. Brush the edges of the wrapper with the beaten egg. Fold the bottom corner up over the filling, fold in the sides, and then roll tightly away from you until sealed.
  3. Cook the egg rolls: For frying, heat 1 inch of oil in a deep skillet to 350°F (175°C). Fry the egg rolls in batches for 2 to 3 minutes per side, until golden brown and crisp. Drain on paper towels. For air frying, lightly spray the assembled rolls with cooking spray and air fry at 375°F (190°C) for 8 to 10 minutes, flipping halfway through, until golden.
  4. Make the dipping sauce: Whisk together the powdered sugar, milk, and vanilla extract until smooth.
  5. Serve the peach cobbler egg rolls warm with the vanilla dipping sauce.

Notes

  • For a vegan option, use vegan egg roll wrappers and substitute the egg wash with a mixture of 1 tablespoon cornstarch mixed with 2 tablespoons water to seal the wrappers.
  • If you prefer a thicker sauce, reduce the milk in the dipping sauce recipe.
  • Ensure the peach filling is completely cool before assembling the egg rolls to prevent the wrappers from tearing.
