Make these easy, bite-sized pecan pie balls without turning on your oven. They capture the gooey, sweet flavor of classic pecan pie and are dipped in chocolate for a perfect holiday treat.

  • 1 cup graham cracker crumbs
  • 1/2 cup powdered sugar, plus extra for dusting
  • 1/4 cup melted butter
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 ounces semi-sweet chocolate, melted for dipping
  • 1 tablespoon coconut oil (optional, for smoother chocolate)

Instructions

  1. Combine the chopped pecans, graham cracker crumbs, and 1/2 cup powdered sugar in a medium bowl. Mix well.
  2. In a separate small bowl, whisk together the melted butter, corn syrup, vanilla extract, and salt until smooth.
  3. Pour the wet ingredients into the dry ingredients. Mix with a spoon or your hands until a thick, uniform dough forms.
  4. Roll the dough into small, one-inch balls. Place them on a baking sheet lined with parchment paper.
  5. Chill the balls in the refrigerator for at least 30 minutes to firm up.
  6. Prepare the chocolate coating by melting the semi-sweet chocolate with the coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
  7. Dip each chilled ball halfway into the melted chocolate, or coat completely, using a fork to lift them out. Let excess chocolate drip off.
  8. Return the dipped balls to the parchment-lined sheet.
  9. Allow the chocolate to set completely at room temperature or in the refrigerator for about 15 minutes before serving or storing.

Notes

  • You can substitute vanilla wafers for graham crackers if you prefer a different crumb base.
  • Store leftover pecan pie balls in an airtight container in the refrigerator for up to one week.
  • For a festive look, sprinkle a few extra chopped pecans onto the wet chocolate immediately after dipping.
