2 cups carrots, thinly sliced or cut into spears
1 cup white vinegar
1 cup water
2 tablespoons granulated sugar
1 tablespoon kosher salt
2 cloves garlic, smashed
1 teaspoon whole black peppercorns
1/2 teaspoon dried oregano
1-2 small jalapeños, thinly sliced (optional, for extra heat)
Instructions
Prepare the carrots: Wash and slice your carrots thinly or cut them into spears. Pack the carrots tightly into a clean, pint-sized glass jar.
Make the brine: In a small saucepan, combine the white vinegar, water, sugar, and salt. Heat over medium heat, stirring until the sugar and salt fully dissolve. Do not boil.
Add flavorings: Remove the brine from the heat. Add the smashed garlic, peppercorns, oregano, and sliced jalapeños (if using) to the hot brine. Stir briefly.
Pour the brine: Carefully pour the hot brine over the carrots in the jar, making sure the carrots are completely submerged. Leave about 1/2 inch of headspace at the top.
Cool and pickle: Let the jar cool on the counter for about 30 minutes. Once cool, seal the jar tightly and transfer it to the refrigerator.
Wait for flavor: Allow the carrots to pickle in the refrigerator for at least 2 hours before serving for a quick pickle. For the best flavor, wait 24 hours. These are refrigerator pickles and must be kept cold.
Notes
For the crispiest pickled carrots, you can use a ratio of 1:1 water to vinegar, but some prefer a tangier flavor, so reduce the water slightly.
These homemade pickles keep well in the refrigerator for up to three weeks.
If you want a sweeter profile, increase the sugar in the brine by one teaspoon.
These are excellent as a healthy carrot snack right out of the jar.
