- 1 cup frozen pineapple chunks
- 1/2 cup unsweetened coconut milk (canned or carton)
- 1/4 cup water or ice cubes (adjust for thickness)
- 1 tablespoon shredded unsweetened coconut
- 1 teaspoon lime juice (optional)
- 1 teaspoon maple syrup or honey (optional sweetener)
- Place the frozen pineapple chunks, coconut milk, water or ice, shredded coconut, lime juice, and sweetener (if using) into a high-speed blender.
- Secure the lid and start blending on a low speed.
- Gradually increase the speed to high. Blend until the mixture is completely smooth and creamy. Stop and scrape down the sides if necessary.
- If the smoothie is too thick, add a splash more water or coconut milk and blend again briefly.
