- 1.5 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 1 cup pumpkin puree
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a small bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture evenly into the bottom of the prepared pan.
- Bake the crust for 8-10 minutes. Remove from oven and let it cool slightly.
- In a large bowl, beat cream cheese and 3/4 cup sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract, pumpkin pie spice, and salt.
- Fold in the pumpkin puree until just combined. Do not overmix.
- Pour the pumpkin cheesecake filling over the cooled crust.
- Bake for 30-35 minutes, or until the edges are set but the center is still slightly jiggly.
- Let the bars cool completely in the pan on a wire rack.
- Once cooled, chill the bars in the refrigerator for at least 2 hours before cutting into squares.
Notes
- For a stronger graham cracker flavor, you can toast the crumbs before mixing with butter.
- Ensure your cream cheese is fully softened for a smooth filling.
- Add a pinch of cinnamon to the crust for extra warmth.
