2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 1/2 cups granulated sugar
3/4 cup vegetable oil
3 large eggs
1 cup pumpkin purée
1 teaspoon vanilla extract
1/2 cup buttermilk
1/4 cup unsweetened cocoa powder
1/4 cup hot water
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
In a separate bowl, cream together the granulated sugar and vegetable oil until well combined.
Beat in the eggs one at a time, then stir in the pumpkin purée and vanilla extract.
Gradually add the dry ingredients to the wet ingredients alternately with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
In a small bowl, whisk together the cocoa powder and hot water until smooth.
Pour half of the pumpkin batter into the prepared baking pan.
Drizzle half of the chocolate mixture over the pumpkin batter.
Gently swirl the batters together with a knife or skewer.
Pour the remaining pumpkin batter over the chocolate layer.
Drizzle the remaining chocolate mixture on top and swirl again.
Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
For an extra moist cake, ensure your pumpkin purée is not watery.
You can add chocolate chips to the batter for an extra chocolatey kick.
A cream cheese frosting or a simple dusting of powdered sugar complements this cake well.
