  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 1/2 cup buttermilk
  • 4 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a small bowl, whisk together the pumpkin puree and buttermilk.
  6. Add half of the dry ingredients to the wet ingredients and mix until just combined.
  7. Add the pumpkin mixture and mix until just combined.
  8. Add the remaining dry ingredients and mix until just combined. Do not overmix.
  9. In another small bowl, beat the softened cream cheese with 1/4 cup granulated sugar and the egg yolk until smooth.
  10. Spoon about 2 tablespoons of pumpkin batter into each muffin liner.
  11. Add about 1 tablespoon of the cream cheese mixture to the center of each muffin.
  12. Top with the remaining pumpkin batter, about 1 tablespoon per muffin.
  13. Gently swirl the cream cheese mixture into the pumpkin batter with a toothpick or skewer.
  14. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  15. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
