8 slices bread
1 cup pumpkin puree
2 large eggs
1/2 cup milk
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground ginger
2 tablespoons sugar
1 tablespoon butter
Powdered sugar for dusting (optional)
Maple syrup for serving
Instructions
Flatten each slice of bread with a rolling pin.
In a shallow bowl, whisk together pumpkin puree, eggs, milk, cinnamon, nutmeg, ginger, and sugar.
Dip each flattened bread slice into the pumpkin mixture, coating both sides.
Place a spoonful of pumpkin mixture onto one end of each bread slice.
Roll up each bread slice tightly.
Melt butter in a non-stick skillet over medium heat.
Cook the roll-ups in the skillet for 2-3 minutes per side, until golden brown and heated through.
Dust with powdered sugar if desired and serve immediately with maple syrup.
Notes
Use canned pumpkin puree, not pumpkin pie filling.
Adjust spices to your preference.
For a crispier texture, you can toast the bread slices lightly before flattening.
