1 cup pumpkin puree
3/4 cup granulated sugar
1 teaspoon pumpkin pie spice
1/2 teaspoon baking soda
1/4 teaspoon salt
3 large eggs
1 cup all-purpose flour
1 teaspoon vanilla extract
For the Filling:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
1 cup powdered sugar
1 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F (190°C). Grease and flour a 10×15 inch jelly roll pan. Line with parchment paper.
In a large bowl, whisk together pumpkin puree, granulated sugar, pumpkin pie spice, baking soda, salt, eggs, and vanilla extract until well combined.
Gradually add the flour to the pumpkin mixture, mixing until just combined. Do not overmix.
Pour the batter evenly into the prepared jelly roll pan.
Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
While the cake is baking, prepare the filling. In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
Gradually add the powdered sugar and vanilla extract, beating until light and fluffy.
Once the cake is baked, immediately invert it onto a clean kitchen towel that has been dusted with powdered sugar. Carefully peel off the parchment paper.
Starting from one of the short ends, tightly roll up the warm cake and the towel together. Let it cool completely on a wire rack.
Once cooled, gently unroll the cake. Spread the cream cheese filling evenly over the surface.
Roll the cake back up, this time without the towel.
Wrap the rolled cake in plastic wrap and refrigerate for at least 1 hour before slicing and serving.
Notes
Make sure your pumpkin puree is not pumpkin pie filling.
Do not overbake the cake, or it will crack when rolled.
Chill the cake sufficiently to make it easier to slice.
