  • 1/2 cup buttermilk
  • For the Frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, pumpkin pie spice, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, combine the pumpkin puree, softened butter, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, alternating with the buttermilk. Mix until just combined, being careful not to overmix.
  5. Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  8. While the cupcakes are cooling, prepare the frosting. In a medium bowl, beat together the softened cream cheese and butter until smooth.
  9. Gradually add the powdered sugar, milk, vanilla extract, and pumpkin pie spice. Beat until the frosting is light and fluffy.
  10. Once the cupcakes are completely cool, frost them with the cream cheese frosting.
