1 cup pumpkin puree
1/2 cup cream cheese, softened
1/4 cup powdered sugar
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1 tablespoon coconut oil
Instructions
In a medium bowl, combine pumpkin puree, softened cream cheese, powdered sugar, pumpkin pie spice, and vanilla extract.
Mix until well combined and smooth.
Chill the mixture in the refrigerator for at least 30 minutes, or until firm enough to roll.
Roll the pumpkin mixture into small balls, about 1 inch in diameter.
Place the rolled balls on a baking sheet lined with parchment paper.
Freeze the balls for about 15-20 minutes, until firm.
While the balls are freezing, melt the chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 30 seconds until smooth.
Dip each frozen pumpkin ball into the melted chocolate, coating completely.
Place the coated truffles back on the parchment-lined baking sheet.
Refrigerate for at least 15 minutes to allow the chocolate to set.
Notes
For a richer flavor, use full-fat cream cheese.
You can add a pinch of cinnamon or nutmeg to the chocolate coating for extra spice.
Store the truffles in an airtight container in the refrigerator.
