1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 tablespoon olive oil
4 cloves garlic, minced
1/2 cup honey
1/4 cup soy sauce (low sodium preferred)
2 tablespoons rice vinegar
1 teaspoon ground ginger
1/4 teaspoon red pepper flakes (optional)
1 tablespoon cornstarch
2 tablespoons cold water
2 green onions, sliced (for garnish)
Sesame seeds (for garnish)
Instructions
Season the chicken pieces lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Do not let it burn.
Pour in the honey, soy sauce, rice vinegar, ground ginger, and red pepper flakes (if using). Bring the mixture to a simmer.
In a small bowl, whisk together the cornstarch and cold water to create a slurry.
Pour the slurry into the simmering sauce, stirring constantly. Cook for 1-2 minutes until the sauce thickens and becomes glossy.
Return the cooked chicken to the skillet. Toss the chicken pieces until they are fully coated in the sticky honey garlic sauce.
Remove from heat. Garnish with sliced green onions and sesame seeds before serving.
Notes
Serve this chicken immediately over steamed white or brown rice.
Steamed broccoli or snap peas pair well with this dish for a complete meal.
For extra flavor, you can use chicken thighs instead of breasts.
