1 box (15.25 oz) red velvet cake mix
2 large eggs
1/2 cup vegetable oil
1 cup white chocolate chips (optional)
Extra powdered sugar for rolling
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, combine the entire box of red velvet cake mix, the two eggs, and the vegetable oil. Mix with an electric mixer or by hand until just combined into a thick dough. Do not overmix.
If using, fold in the white chocolate chips gently.
Place about 1/4 cup of extra powdered sugar in a shallow dish.
Scoop the dough into tablespoon-sized balls. Roll each dough ball completely in the powdered sugar until fully coated.
Place the coated dough balls onto the prepared baking sheets, leaving about 2 inches between them.
Bake for 9 to 11 minutes. The edges should look set, but the centers will still look slightly soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The cookies will flatten and develop a crinkle texture as they cool.
Notes
For a slightly thicker cookie, chill the dough for 30 minutes before rolling in powdered sugar and baking.
If you prefer a less sweet cookie, you can reduce the amount of powdered sugar used for rolling, though this will reduce the classic crinkle look.
These cookies store well in an airtight container at room temperature for up to 4 days.
