Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
  2. Prepare the squash: Carefully peel the butternut squash. Slice it in half lengthwise. Scoop out the seeds and stringy pulp using a spoon.
  3. Cut the squash into uniform 1-inch cubes. Uniform size helps everything roast evenly.
