  • 2 lbs butternut squash, peeled, seeded, and cubed
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/4 cup heavy cream (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, salt, pepper, and nutmeg on a baking sheet.
  3. Roast for 25-30 minutes, or until tender.
  4. While squash is roasting, sauté onion in a pot over medium heat until softened. Add garlic and cook for 1 minute more.
  5. Add roasted squash and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Carefully transfer soup to a blender or use an immersion blender to puree until smooth.
  7. Stir in heavy cream if desired.
  8. Serve hot.
