1.5 lb salmon fillets, skin removed
2 tbsp honey
1 tbsp olive oil
1 tbsp lime juice
1 tsp chipotle powder
1/2 tsp salt
1/4 tsp black pepper
12 small corn or flour tortillas
For the Slaw:
2 cups shredded green cabbage
1/2 cup shredded red cabbage
1/4 cup chopped fresh cilantro
2 tbsp mayonnaise
1 tbsp lime juice
1 tsp sugar

Instructions
Mix honey, olive oil, lime juice, chipotle powder, salt, and pepper in a bowl. Place salmon in a shallow dish and coat completely with the glaze. Let it marinate for 10 minutes.
While salmon marinates, prepare the slaw. Combine both cabbages and cilantro in a medium bowl.
In a small bowl, whisk together mayonnaise, lime juice, sugar, and salt until smooth. Pour dressing over the cabbage mixture and toss well to coat. Set aside.
Heat a large skillet over medium-high heat. Place the salmon fillets in the hot skillet. Cook for 4 to 5 minutes per side, until the salmon flakes easily with a fork and the glaze is slightly caramelized.
Warm the tortillas according to package directions (in a dry skillet or microwave).
Flake the cooked salmon into bite-sized pieces using a fork.
Assemble the tacos: Place a portion of flaked salmon onto each warm tortilla. Top generously with the zesty slaw. Serve immediately with extra lime wedges if desired.
Notes
You can grill the salmon instead of pan-searing for a smoky flavor. Grill over medium heat for about 4 minutes per side.
For a creamy topping, mix 1/2 cup sour cream or Greek yogurt with 1/4 cup mashed avocado and a squeeze of lime juice to make a simple avocado crema.
If you prefer less heat, reduce the chipotle powder to 1/2 teaspoon.
