This recipe delivers a deeply satisfying, creamy sausage potato soup packed with tender potatoes and savory Italian sausage. It is a simple, one-pot meal perfect for cozy weeknights or chilly weather.

  • 1 pound Italian sausage (sweet or hot)
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 pounds russet potatoes, peeled and diced into 1/2-inch pieces
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup shredded Parmesan cheese (optional)
  • Salt to taste

Instructions

  1. In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it up with a spoon until browned. Drain off most of the excess grease, leaving about 1 tablespoon in the pot.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Sprinkle the flour over the sausage and onion mixture. Stir constantly for 1 minute to cook out the raw flour taste.
  4. Slowly whisk in the chicken broth until smooth. Add the diced potatoes, Italian seasoning, thyme, and pepper. Bring the mixture to a boil, then reduce heat, cover, and simmer for 15 to 20 minutes, or until the potatoes are tender when pierced with a fork.
  5. Stir in the milk and heavy cream. Heat gently until the soup is warmed through; do not let it boil after adding the dairy.
  6. If using, stir in the Parmesan cheese until melted and the soup is creamy. Taste and add salt as needed.
  7. Serve this hearty sausage potato soup hot.

Notes

  • For a thicker soup, mash a few of the cooked potatoes against the side of the pot before adding the milk and cream.
  • If you want a Tuscan Soup Recipe feel, add 1 cup of chopped kale during the last 5 minutes of simmering.
  • You can use beef sausage or pork sausage if Italian sausage is unavailable for this easy sausage recipe.
