  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup BBQ sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bag (10-13 ounces) tortilla chips
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped red onion
  • 1/2 cup chopped fresh cilantro
  • Optional toppings: sour cream, jalapeños, avocado

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine chicken breasts, BBQ sauce, chili powder, cumin, garlic powder, salt, and pepper.
  3. Place chicken on a baking sheet and bake for 20-25 minutes, or until cooked through.
  4. Remove chicken from oven, shred it with two forks, and mix with the BBQ sauce on the pan.
  5. Spread tortilla chips evenly on a large baking sheet.
  6. Top the chips with the BBQ chicken mixture.
  7. Sprinkle both Monterey Jack and cheddar cheeses over the chicken.
  8. Add chopped red onion.
  9. Bake for 5-7 minutes, or until the cheese is melted and bubbly.
  10. Top with fresh cilantro and any other desired toppings before serving.
