Prepare a complete, flavorful meal with chicken and potatoes cooked together on one baking sheet for simple cleanup.

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1.5-inch pieces
  • 1.5 lbs small potatoes (Yukon Gold or red), quartered
  • 3 tablespoons olive oil, divided
  • 2 tablespoons lemon pepper seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large lemon, thinly sliced
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, toss the quartered potatoes with 1 tablespoon of olive oil, 1/2 teaspoon of the lemon pepper seasoning, and the garlic powder. Spread the potatoes in a single layer on one half of the prepared baking sheet.
  3. In the same bowl, toss the chicken pieces with the remaining 2 tablespoons of olive oil, the remaining 1.5 teaspoons of lemon pepper seasoning, and the salt and black pepper.
  4. Arrange the seasoned chicken pieces on the other half of the baking sheet, ensuring they are not overlapping the potatoes too much.
  5. Place the thin lemon slices evenly over the chicken pieces.
  6. Bake for 20 minutes.
  7. Remove the pan from the oven and gently toss the potatoes. Return the pan to the oven and bake for another 10 to 15 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit) and the potatoes are tender and slightly browned.
  8. Garnish with fresh chopped parsley before serving.

Notes

  • For crispier potatoes, you can roast them alone for 10 minutes before adding the chicken to the pan.
  • Use chicken thighs for juicier results, or breasts for a leaner option.
  • If you do not have parchment paper, lightly grease the baking sheet with oil.
