A simple, low-cleanup dinner featuring Italian sausage, bell peppers, and onions roasted together on one sheet pan.

  • 1.5 lbs Italian sausage links (sweet or hot)
  • 3 large bell peppers (red, yellow, green), sliced thickly
  • 1 large yellow onion, cut into thick wedges
  • 3 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
  2. Place the sausage links, sliced bell peppers, and onion wedges onto the prepared baking sheet.
  3. Drizzle the olive oil over the sausage and vegetables.
  4. Sprinkle the Italian seasoning, salt, pepper, and garlic powder (if using) evenly over everything.
  5. Use your hands to toss the ingredients directly on the pan until they are lightly coated with oil and seasoning. Spread everything into a single layer, ensuring the sausage is not completely covered by vegetables.
  6. Roast for 25 to 30 minutes, flipping the sausage and stirring the vegetables halfway through the cooking time. The sausage should be browned and cooked through, and the vegetables should be tender with slightly charred edges.
  7. Remove from the oven and serve immediately.

Notes

  • For added flavor, add 1 cup of small potato chunks or cherry tomatoes to the pan during the last 15 minutes of cooking.
  • Serve this meal inside crusty rolls for sandwiches, over cooked rice, or alongside quinoa.
  • If you prefer softer vegetables, toss them with the oil and seasoning 5 minutes before adding the sausage to the pan.
