Make flavorful shrimp fajitas quickly using a single sheet pan for minimal cleanup. This recipe features a zesty lime and simple seasoning blend for a fast weeknight seafood dinner.

  • 2 large bell peppers (one red, one green), sliced
  • 1 large yellow onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice, fresh
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small flour or corn tortillas (for serving)
  • Optional toppings: sour cream, salsa, avocado slices

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, combine the shrimp, sliced peppers, and sliced onion.
  3. In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), salt, and black pepper to create the marinade.
  4. Pour the marinade over the shrimp and vegetables. Toss everything gently until evenly coated.
  5. Spread the shrimp and vegetable mixture in a single layer on the prepared baking sheet. Do not overcrowd the pan.
  6. Bake for 10 to 12 minutes, or until the shrimp are pink and cooked through and the vegetables are tender-crisp.
  7. Remove the pan from the oven. Serve the sizzling shrimp fajitas immediately with warm tortillas and your choice of toppings.

Notes

  • For extra flavor, you can add 1/2 teaspoon of Cajun seasoning to the spice mix for a Cajun shrimp fajita twist.
  • If you prefer a softer vegetable texture, toss the peppers and onions with the oil and spices first, roast for 5 minutes, then add the shrimp and roast for the remaining time.
