  • 2 pounds beef sirloin or chuck roast, cut into 1-inch pieces
  • 1 cup sliced mushrooms
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Place beef, mushrooms, onion, and garlic in your slow cooker.
  2. In a bowl, whisk together the cream of mushroom soup, beef broth, Worcestershire sauce, salt, and pepper. Pour this mixture over the beef and vegetables.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
  4. About 15 minutes before serving, stir in the sour cream until heated through.
  5. Garnish with fresh parsley before serving. Enjoy over egg noodles or rice!
